16 – Scalloped Potatoes with Cheese

These tasty potatoes come by their appeal naturally – they are baked with butter, cheese, milk and flour. You can make them for holiday gatherings, office parties or everyday dinners.

Makes 6-8 Servings

Cooking + Prep Time: 1 & 1/2 hour Ingredients: • 6-8 potatoes, medium, sliced thinly

• 2 tbsp. of all-purpose flour

• 1 tsp. of salt, kosher

• 1/8 tsp. of pepper, ground

• 3 tbsp. of butter, unsalted

• 2 cups of milk, scalded

• 1/2 cup of shredded cheddar cheese

Instructions:

1. Heat oven to 375F. Butter a small casserole dish.

2. Layer 1/3 of potatoes in casserole dish. 3. Combine kosher salt and ground pepper in cup. Sprinkle

1/2 flour mixture on top of the potatoes and repeat with next layer of 1/3 potatoes and 1/2 flour mixture. Top with the rest of the sliced potatoes.

4. Dot the top with butter. Pour scalded milk over potatoes. 5. Cover casserole with foil or lid. Bake for 40-45 minutes, till potatoes are barely tender. Then remove foil or cover. Sprinkle cheese shreds over potatoes.

6. Return potatoes to oven. Leave uncovered and bake for 15 more minutes, till cheese is melted and potatoes become tender. Serve hot.
